Karuppu Kavuni Rice Puttu Recipe
Why Karuppu Kavuni Rice?
Karuppu Kavuni (Black Rice) is a traditional rice variety from Tamil Nadu, rich in fiber, iron, and antioxidants. When used in Puttu, it brings a nutty flavor, natural purple – black color, and loads of health benefits – making it a perfect wholesome breakfast or evening snack.
Ingredients:
- Karuppu Kavuni Rice – 1 cup
- Fresh grated coconut – ½ cup
- Salt – a pinch
- Jaggery – ½ cup (optional, for sweet version)
- Cardamom powder – ½ tsp (optional)
- Water – as needed
Preparation Method:
- Wash and soak the Karuppu Kavuni rice overnight (8-10 hours).
- Drain and spread it on a cloth. Once slightly dry, grind it into a coarse puttu powder.
- Dry roast the rice powder in a pan for 5-7 minutes on low flame.
- Sprinkle water little by little with a pinch of salt and mix until the flour turns crumbly (hold it in your hand, it should hold shape but also break easily).
- In a puttu maker, layer grated coconut first, then rice flour, then coconut again. Repeat till full.
- Steam for 10-12 minutes until cooked.
- Serve hot with jaggery syrup, banana, or curry.
