Karuppu Kavuni Arisi Idli – A Healthy Twist to Traditional Idli
Karuppu Kavuni Rice (Black Rice) is a traditional variety of rice native to Tamil Nadu, packed with fiber, iron, and antioxidants. Replacing regular white rice with this in idli batter not only boosts the nutrition but also brings a beautiful purple hue and nutty flavor to your plate.
Let’s learn how to make soft and fluffy idlis using Karuppu Kavuni rice.
Ingredients:
- Karuppu Kavuni Rice – 2 cups
- Urad dal (Whole white urad) – ¾ cup
- Fenugreek seeds – 1 tsp
- Salt – as required
- Water – as needed for soaking and grinding
Preparation Method:
- Soak the Karuppu Kavuni rice in water for at least 6-8 hours or overnight.
- Soak urad dal and fenugreek seeds together for about 4-5 hours.
- Grind urad dal into a fluffy batter. Then grind the soaked rice into a slightly coarse batter.
- Mix both batters together, add salt, and let it ferment for 8-10 hours or overnight.
- Pour the batter into greased idli moulds and steam for 10-12 minutes.
- Serve hot with coconut chutney or sambar.
