Instructions: Rinse and Soak: Wash Karuppu Kavuni rice thoroughly and soak in water for 8–10 hours or overnight. Pressure Cook: Drain and pressure cook the soaked rice with 2½ cups of water for 5–6 whistles until soft. Mash the Rice: Allow to cool slightly, then mash the rice to a porridge-like consistency. Season with Salt: Add salt to taste and mix well. Add Buttermilk or Curd (Optional): Mix in ½ cup of buttermilk or curd for a refreshing touch. Garnish: Top with roasted cumin seeds and/or finely chopped shallots. Serve: Serve warm or slightly chilled as a wholesome, nutritious meal.
