Karuppu Kavuni Arisi Koozh
Ingredients:
½ cup Karuppu Kavuni Arisi (Black Kavuni Rice)
A nutrient-rich ancient rice variety, known for its deep black color and high antioxidant content.
2½ cups Water
Used for soaking and cooking the rice to achieve the right texture.
Salt – to taste
Enhances the natural flavor of the rice.
½ cup Buttermilk or Curd (optional)
Adds a slight tang and creaminess; ideal for serving during warmer months.
1 tsp Cumin Seeds (roasted)
Offers a warm, earthy flavor and aids digestion.
Shallots – finely chopped (optional)
Adds crunch and mild sweetness, enhancing the overall taste.
Instructions:
Rinse and Soak: Wash Karuppu Kavuni rice thoroughly and soak in water for 8–10 hours or overnight.
Pressure Cook: Drain and pressure cook the soaked rice with 2½ cups of water for 5–6 whistles until soft.
Mash the Rice: Allow to cool slightly, then mash the rice to a porridge-like consistency.
Season with Salt: Add salt to taste and mix well.
Add Buttermilk or Curd (Optional): Mix in ½ cup of buttermilk or curd for a refreshing touch.
Garnish: Top with roasted cumin seeds and/or finely chopped shallots.
Serve: Serve warm or slightly chilled as a wholesome, nutritious meal.
